Kefir Ice Cream
Serves 12 (1½ quarts ice cream)
2 large eggs
¼ cup lo han (monk fruit) sweetener or ¾ tsp. stevia liquid (flavored, if desired)
2 cups kefir
1 cup heavy cream (or kefir heavy cream)
2 tsp. pure vanilla extract
For chocolate: 2/3 cup unsweetened cocoa powder
For strawberry: 1 cup crushed strawberries
Directions: Beat eggs well and add sweetener. Blend in kefir, cream, and vanilla extract; add cocoa powder or strawberries (if desired). Transfer mixture to an ice cream maker and follow manufacturer’s instructions. Place in freezer to harden, about 3 to 4 hours. Serve and enjoy!
