A Heart-Healthy Recipe to Warm Up Your Week

Experts agree that a healthy diet can go a long way toward better cardiovascular health and longevity—so why not give your meal plan a little change of heart this week? This deliciously satisfying seafood gumbo is worth the few extra minutes of prep time, especially on chilly winter days:

Savory Seafood Gumbo
1 tbsp. extra virgin olive oil
2 c. chopped onion
2 c. chopped celery
1 c. chopped green bell pepper
1 c. chopped red bell pepper
3 cloves garlic, minced
1 tbsp. Cajun seasoning mix (or similar Creole spice blend)
2 bay leaves
6 c. low-sodium vegetable or chicken stock
One 14.5 ounce can low-sodium chopped tomatoes
1 lb. medium shrimp (about 30 shrimp), peeled and deveined
1 c. fresh crabmeat
2 tbsp. hot sauce
Optional: 1 c. sliced okra (fresh or frozen)

Heat oil in a heavy-bottom 5-quart saucepan over medium heat. Add onion, celery, peppers, garlic, seasoning, and bay leaves. Sauté 5 to 7 minutes or until the onions and peppers are softened. Add stock and tomatoes (with juice) and bring to a boil; reduce heat and simmer 40 minutes. Add shrimp, crabmeat, hot sauce, and okra. Return mixture to a boil, then cover and remove from heat. Let stand 10 minutes or until shrimp turn pink. Serve hot.
