The last thing you want to do is spend hours in the kitchen preparing another meal, which is why this simple slow cooker chicken cacciatore is the perfect post-holiday dinner to warm up your week—and don’t forget to store and freeze the leftovers for a quick and easy meal later!

Slow Cooker Chicken Cacciatore
Serves 12

Ingredients:
1 tsp. onion powder
1 tsp. garlic powder
1 tsp. dried oregano
1 tsp. dried basil
¾ tsp. freshly ground black pepper
6 boneless, skinless chicken breasts
3 boneless, skinless chicken thighs, cut in half
1 tbsp. coconut oil
2 cups button mushrooms, sliced
1 ½ cups red bell pepper, sliced
1 ½ cups green bell pepper, sliced
1 cup onion, thinly sliced
One 28-oz. can stewed tomatoes
One 6-oz. can tomato paste
2 bay leaves
1 tbsp. balsamic vinegar

Directions: Combine dried seasonings; dredge chicken breasts and thighs in spice mixture and set aside (keep leftover spices). Add coconut oil to bottom of slow cooker. Add mushrooms, peppers, and onion. Add tomatoes, tomato paste, bay leaves, and balsamic. Layer on chicken and top with any remaining spices. Cover and cook on low heat for 7 to 9 hours. Remove bay leaves and serve.
