Roasted Red Pepper Hummus Dip
Ingredients:
- One 7-ounce jar roasted red peppers
- One 15-ounce can chickpeas, rinsed and drained
- One 15-ounce can cannellini beans, drained and rinsed
- ¼ cup tahini
- 3 cloves garlic, minced
- 2 tbsp. fresh lemon juice
- 1 tsp. ground cumin
- 2 tbsp. low-fat plain yogurt
- Sea salt and freshly ground black pepper to taste
Directions:
Mix all ingredients except salt and pepper in a food processor. Process until mixture is smooth. Season with salt and pepper. Cover and refrigerate. Serve chilled or at room temperature.

Homemade Salsa
Ingredients:
- 2 large tomatoes, seeded and chopped
- 1 serrano or jalepeño pepper, chopped
- 1/3 cup chopped green onion
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons fresh lime juice
- 1/4 teaspoon salt
Directions:
Mix all ingredients well and chill.

Homemade Guacamole
Ingredients:
- 3 large, ripe Haas avocados
- ½ red onion, chopped
- 2 cloves garlic, minced
- 1 tsp. ground cumin
- Juice of 2 small limes
- 2 tbsp. fresh cilantro, chopped
- 4 green onions, diced
Directions:
Cut avocados in half and remove pulp; mash well in bowl. Add all other ingredients and mix well. Serve and enjoy.

Egg Salad
Ingredients:
- 1 boiled egg, whole
- 1 boiled egg, white only
- ½ tsp. dry mustard
- ½ tbsp. light mayonnaise
- ½ tbsp. pickle relish
- Freshly ground black pepper to taste
Directions:
Place eggs in small bowl and mash with fork. Add remaining ingredients and mix well. Chill and serve.

Healthy Tuna Salad
Ingredients:
- 1 small can light tuna in water, drained
- 1 tbsp. light mayonnaise
- ½ tbsp. pickle relish
- ½ medium apple, chopped
- ½ tsp. celery seed
- Freshly ground black pepper to taste
Directions:
Mix all ingredients well. Chill and serve.
