When temperatures start rising, get ready to serve up a cool treat with a healthy twist. Kefir is a fermented milk drink with beneficial probiotic cultures that you can find at any market, and this delicious kefir ice cream recipe is so simple you can even make it the morning of the party!

Kefir Ice Cream
Serves 12 (1½ quarts ice cream)
Ingredients:
2 large eggs
¼ cup lo han (monk fruit) sweetener or ¾ tsp. stevia liquid (flavored, if desired)
2 cups kefir
1 cup heavy cream (or kefir heavy cream)
2 tsp. pure vanilla extract

For chocolate: 2/3 cup unsweetened cocoa powder
For strawberry: 1 cup crushed strawberries

Directions: Beat eggs well and add sweetener. Blend in kefir, cream, and vanilla extract; add cocoa powder or strawberries (if desired). Transfer mixture to an ice cream maker and follow manufacturer’s instructions. Place in freezer to harden, about 3 to 4 hours. Serve and enjoy!
