Carrot & Burdock with Sweet Plum Vinegar

Serves 2

Ingredients:

  • 6 to 8 medium carrots, chopped
  • 1 fresh burdock root, chopped
  • ¼ cup fresh parsley leaves
  • 2 drops ume plum vinegar

Directions:
Thoroughly wash vegetables and rinse parsley. Pass carrots, burdock and parsley through juicer. Add vinegar. Adjust flavor to taste. Serve warm or cool and enjoy.
